Falafel Preparation

Soak Chickpeas

Rinse and soak the canned chickpeas in water for at least 2 hours or overnight.

Prepare Falafel Mixture

In a food processor, combine the soaked chickpeas, parsley, cilantro, garlic, cumin, coriander, baking powder, salt, and black pepper. Pulse until the mixture is finely chopped but not pureed.

Form Falafel Balls

Using your hands, form the mixture into small balls (about 1.5 inches in diameter). Place them on a tray or plate.

Fry Falafel

Heat olive oil in a deep skillet over medium heat. Fry the falafel balls in batches until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.

Mix Tahini Sauce

In a bowl, whisk together tahini, lemon juice, minced garlic, water, and salt until smooth. Adjust the water for desired consistency.

Pita-Wiches Assembly

Prepare Pita

Gently warm the pita bread in a skillet or microwave to make it pliable.

Assemble Pita-Wiches

In each pita, add a layer of lettuce leaves, followed by falafel balls, sliced cucumbers, and diced tomatoes. Drizzle tahini sauce over the top.

Serve

Serve the pita-wiches immediately while warm, with additional tahini sauce on the side if desired.
