Method
Preparation of Marinade
Make the Marinade
In a small bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, paprika, salt, and black pepper until well combined.
Marinate the Salmon
Place the salmon filet in a shallow dish and pour the marinade over it. Ensure the salmon is well coated. Cover and refrigerate for at least 30 minutes.
Cooking the Rice
Rinse the Rice
Rinse the white rice under cold water until the water runs clear to remove excess starch.
Cook the Rice
In a medium saucepan, combine the rinsed rice, water, and salt. Bring to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and simmer for 18-20 minutes or until the rice is tender and water is absorbed. Remove from heat and let sit covered for 5 minutes, then fluff with a fork.
Grilling the Salmon
Preparing the Salad
Assemble the Salad
In a large bowl, combine the mixed greens, cherry tomatoes, and cucumber.
Dress the Salad
In a small bowl, whisk together olive oil, balsamic vinegar, salt, and black pepper. Drizzle the dressing over the salad and toss gently to combine.
Serving
Plate the Dish
Serve the grilled salmon alongside a portion of rice and a generous helping of salad. Enjoy your meal!
