Soak the Rice
In a large bowl, combine the rice and 2 cups of water. Let it soak for at least 4 hours, or overnight if possible.

Blend Ingredients
After soaking, drain the rice and place it in a blender with the remaining 2 cups of water and the cinnamon sticks. Blend until the mixture is smooth and the rice is finely ground.

Strain the Mixture
Using a fine mesh strainer or cheesecloth, strain the blended rice mixture into a pitcher. Discard the solids.

Serve
Serve the horchata over ice and enjoy. You can garnish it with a sprinkle of cinnamon if desired.
