    Prepare the Dough

    In a large bowl, mix warm water and yeast. Let it sit for 5 minutes until frothy. Add olive oil, salt, and flour gradually, mixing until a dough forms. Knead on a floured surface for about 10 minutes. Place in a greased bowl, cover, and let it rise for 1 hour.

    Cook the Filling

    In a skillet, heat a tablespoon of oil over medium heat. Add chopped onions and sauté until translucent. Add garlic, ground meat, red chili flakes, cumin, and black pepper. Cook until the meat is browned and cooked through. Stir in crumbled feta and parsley, then remove from heat.

    Assemble the Gyros

    Divide the dough into 4 equal pieces and roll each into a circle. Place some filling in the center of each circle and fold the dough over to create a half-moon shape. Press the edges to seal.

    Fry the Gyros

    Heat oil in a deep frying pan over medium heat. Fry each gyro until golden brown on both sides, about 3-4 minutes per side. Remove and drain on paper towels.

    Serve hot with your favorite dipping sauce or salad on the side.
