1. Prepare the Gyro Meat
Preheat your grill or broiler. Grill or broil the beef and lamb gyro meat until fully cooked and slightly charred, about 8-10 minutes. Let rest before slicing.
2. Prepare the Salad Base
In a large bowl, combine chopped romaine lettuce, diced cucumber, sliced red onion, halved grape tomatoes, crumbled feta cheese, and pitted kalamata olives.
3. Make the Vinaigrette
In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, honey, minced garlic, salt, and black pepper until well combined.
4. Assemble the Salad
Slice the rested gyro meat and place it on top of the salad mixture. Drizzle the Nupa vinaigrette over the salad.
5. Serve
Serve the gyros salad with pita bread and tzatziki sauce on the side.
