    Prepare the Filling

    In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent. Add minced garlic and chopped spinach, cooking until the spinach is wilted. Remove from heat and let cool slightly.

    Mix the Filling

    In a bowl, combine the sautéed spinach mixture with crumbled feta cheese, beaten egg, lemon juice, salt, and black pepper. Mix well and set aside.

    Assemble the Spanakopita

    Preheat the oil for frying in a deep skillet or fryer. Lay out one sheet of phyllo dough on a clean surface and brush with melted butter. Layer another sheet on top and brush again with butter. Cut the dough into strips (about 4 inches wide). Place a spoonful of the filling at one end of each strip and fold the dough over to form a triangle. Continue folding the triangle down the strip, sealing in the filling, until the end of the strip is reached. Brush the top with more melted butter.

    Fry the Spanakopita

    Carefully place the filled triangles in the hot oil and fry until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.

    Serve warm with your favorite dipping sauce or yogurt.
