Prepare the Falafel Mixture
In a food processor, combine the canned chickpeas, parsley, cilantro, garlic, cumin, coriander, salt, and pepper. Pulse until the mixture is coarsely blended but not pureed.

Add Baking Powder and Flour
Transfer the mixture to a bowl, then add the baking powder and flour. Mix until combined. The mixture should be moist but hold together when shaped.

Shape the Falafel
Using your hands, shape the mixture into small balls or patties, about 1.5 inches in diameter.

Cook the Falafel
Heat olive oil in a frying pan over medium heat. Fry the falafel balls in batches for about 3-4 minutes on each side, or until golden brown and crispy.

Serve
Remove the falafel from the pan and drain on paper towels. Serve warm with dipping sauce or in pita bread with veggies.
