Prepare the Falafel Mixture
In a food processor, combine the canned chickpeas, chopped onion, minced garlic, fresh parsley, ground cumin, ground coriander, baking powder, flour, salt, and black pepper. Pulse until a coarse mixture forms. Transfer to a bowl and refrigerate for 30 minutes.

Fry the Falafel
In a deep skillet, heat vegetable oil over medium-high heat. Using wet hands, form the chickpea mixture into small balls (about 1 inch in diameter). Fry the falafel in batches until golden brown, about 4-5 minutes per side. Drain on paper towels.

Assemble the Pita
Warm the pita bread slightly. Spread a generous layer of hummus on each pita. Top with fried falafel, shredded lettuce, diced tomato, and sliced onion. Drizzle with tahini sauce.

Serve
Serve the falafel pita immediately with tzatziki sauce on the side.
