1. Prepare the Dough

In a mixing bowl, combine the flour, baking powder, and salt. Mix well. Add warm water and olive oil, then knead the dough until smooth. Let it rest for 30 minutes.

2. Prepare the Filling

Chop the fresh mozzarella and cherry tomatoes into small pieces. In a bowl, combine mozzarella, cherry tomatoes, basil leaves, balsamic glaze, salt, and black pepper. Mix gently.

3. Assemble the Pita Pies

Divide the dough into small balls. Roll each ball into a flat circle. Place a spoonful of the filling on one half of the circle, then fold over and seal the edges securely.

4. Fry the Pita Pies

Heat oil in a frying pan over medium heat. Fry each filled pita pie for about 3-4 minutes on each side or until golden brown and crispy. Drain on paper towels.
