Add the rice to the saucepan and stir for 2 minutes until the rice is coated and lightly toasted. Pour in the chicken broth and add salt and pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is tender and the liquid is absorbed.

Cook the Fish
While the rice is cooking, season the fish fillets with salt and pepper. Heat a non-stick skillet over medium-high heat and add a little olive oil. Add the fish fillets and cook for 3-4 minutes on each side or until cooked through and flaky.

Serve
Once the rice is cooked, fluff it with a fork and place a generous serving on each plate. Top with a piece of fish, a slice of lemon, and sprinkle with fresh parsley before serving.
