Directions

  1. 1

    Prepare the Ingredients

Gather all the ingredients and prepare them for cooking. Cut the pancetta into small cubes, grate the Parmesan cheese, and beat the eggs in a bowl.

  2. 2

    Cook the Spaghetti

In a large pot, bring salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes.

  3. 3

    Cook the Pancetta

While the spaghetti is cooking, heat olive oil in a large skillet over medium heat. Add the cubed pancetta and cook until crispy, about 4-5 minutes. Remove from heat and set aside.

  4. 4

    Combine Eggs and Cheese

In the bowl with the beaten eggs, add the grated Parmesan cheese and black pepper. Mix well to create a creamy mixture.

  5. 5

    Combine Spaghetti and Pancetta

Once the spaghetti is cooked, reserve about 1 cup of pasta water and then drain the spaghetti. Immediately add the hot spaghetti to the skillet with the pancetta, tossing to combine.

  6. 6

    Add Egg Mixture

Remove the skillet from the heat and quickly pour the egg and cheese mixture over the hot spaghetti, stirring vigorously to create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

  7. 7

    Serve

Taste and adjust seasoning with salt and additional black pepper if necessary. Serve immediately, garnished with extra Parmesan if desired.
