Method
Preparing the Calamari

Clean the Calamari
If using whole calamari, clean and slice into rings. Rinse under cold water and pat dry with paper towels.

Prepare Flour Mixture
In a bowl, combine all-purpose flour, cornstarch, salt, black pepper, and cayenne pepper. Mix well.

Frying the Calamari

Heat Oil
In a deep pot or fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Batter and Fry
Dredge calamari rings in the flour mixture, dip in the egg mixture, then dredge again in the flour mixture. Fry in batches for 2-3 minutes until golden brown. Remove and drain on paper towels.
Making the Marinara Sauce

Add Tomatoes and Seasonings
Add canned crushed tomatoes, dried oregano, dried basil, salt, black pepper, and sugar. Stir well to combine.

Simmer Sauce
Let the sauce simmer for about 15-20 minutes, stirring occasionally. Adjust seasoning if necessary.

Finish Sauce
Stir in fresh parsley just before serving.
Serving

Plate the Dish
Arrange fried calamari on a serving plate. Serve with marinara sauce on the side and wedges of lemon for squeezing over the calamari.
