Panna Cotta Base

Method

Panna Cotta Base Preparation

    Bloom the Gelatin

    In a small bowl, combine the gelatin powder with 3 tablespoons of cold water. Let it sit for about 5-10 minutes until it swells and becomes gelatinous.

    Heat the Cream Mixture

    In a saucepan over medium heat, combine the heavy cream, whole milk, and granulated sugar. Stir frequently until the mixture is hot but not boiling, and the sugar has dissolved completely.

    Add Vanilla and Gelatin

    Remove the saucepan from heat. Stir in the vanilla extract and bloomed gelatin until well combined. Ensure the gelatin is fully dissolved.

    Pour into Molds

    Pour the mixture into individual serving cups or molds. Allow it to cool to room temperature, then cover and refrigerate for at least 4 hours or until set.

Berry Sauce Preparation

    Prepare the Berries

    In a medium saucepan, combine the mixed berries and granulated sugar. Gently mash the berries with a fork to release some of their juices.

    Cook the Sauce

    Add the lemon juice to the berry mixture and place the saucepan over medium heat. Cook for about 5-7 minutes, stirring occasionally, until the mixture thickens slightly.

    Cool the Sauce

    Remove from heat and let the sauce cool to room temperature. It will thicken more as it cools.
