Prepare the Base

    Combine Milk and Cream

    In a saucepan, combine 2 cups of whole milk and 1 cup of heavy cream. Heat over medium heat until the mixture is warm but not boiling.

    Whisk Egg Yolks and Sugar

    In a separate bowl, whisk together 4 large egg yolks and 3 tablespoons of granulated sugar until the mixture is pale and slightly thickened.

    Temper the Egg Mixture

    Slowly pour the warm milk and cream mixture into the egg yolk mixture, whisking constantly to temper the eggs. This prevents them from scrambling.

    Cook the Mixture

    Return the mixture to the saucepan and cook over medium-low heat, stirring constantly until it thickens enough to coat the back of a spoon. This should take about 5-7 minutes.

    Add Vanilla

    Remove the saucepan from heat and stir in 1 teaspoon of vanilla extract. Allow the mixture to cool to room temperature.

Flavoring the Gelato

    Puree Strawberries

    For strawberry gelato, blend 1 cup of fresh strawberries until smooth and add it to the cooled base mixture.

    Mix in Cocoa Powder

    For chocolate gelato, whisk in 1 cup of cocoa powder until fully incorporated into the cooled base mixture.

    Infuse Coffee Flavor

    For coffee gelato, steep 1 cup of coarsely ground coffee beans in the warm milk and cream mixture for 30 minutes before straining out the beans and proceeding with the base preparation.

    Infuse Mint Flavor

    For mint gelato, steep 1 cup of fresh mint leaves in the warm milk and cream mixture for 30 minutes. Strain the leaves out before proceeding with the base preparation.

Churn and Freeze

    Churn the Mixture

    Pour the flavored gelato base into an ice cream maker and churn according to the manufacturer's instructions, typically for about 20-25 minutes.

    Freeze the Gelato

    Transfer the churned gelato into an airtight container. Freeze for at least 4 hours to firm up before serving.
