Method

Salmon Preparation

  1. 1

    Prepare the Salmon

Preheat the grill to medium-high heat. Brush the salmon fillets with olive oil and season with salt and black pepper on both sides.

  2. 2

    Grill the Salmon

Place the salmon fillets skin-side down on the grill. Cook for about 6-8 minutes on each side, or until the internal temperature reaches 145°F (63°C) and the fish flakes easily with a fork.

Lemon-Dill Butter Sauce

  1. 3

    Make the Sauce

In a small saucepan over medium heat, melt the unsalted butter. Once melted, add the minced garlic and sauté for about 1 minute until fragrant.

  2. 4

    Finish the Sauce

Stir in the fresh lemon juice and chopped dill. Cook for an additional 2 minutes, then remove from heat and set aside.

Vegetables Preparation

  1. 5

    Prepare the Vegetables

In a grill basket or on a sheet of aluminum foil, toss the zucchini, bell peppers, and asparagus with a little olive oil, salt, and pepper.

  2. 6

    Grill the Vegetables

Place the vegetables on the grill and cook for about 5-7 minutes, turning occasionally, until they are tender and slightly charred.

Rice Preparation

  1. 7

    Cook the Rice

In a medium saucepan, combine the white rice and water. Bring to a boil over high heat, then reduce the heat to low, cover, and simmer for about 18-20 minutes or until the rice is tender and the water is absorbed.

Serving

  1. 8

    Plate the Dish

On a plate, place a serving of rice, top it with a grilled salmon fillet, and drizzle the lemon-dill butter sauce over the fish. Serve the grilled seasonal vegetables on the side.
