Fish Preparation

    Marinate the Fish

    In a bowl, combine olive oil, lime juice, garlic powder, cumin, salt, and black pepper. Add the fish fillets and coat evenly. Let marinate for 15-20 minutes.

    Preheat a grill or grill pan to medium-high heat. Grill the marinated fish for about 3-4 minutes on each side or until cooked through and flaky. Remove from heat and break into chunks.

    In a large bowl, combine the shredded cabbage, chopped cilantro, lime juice, olive oil, and salt. Toss well to combine and set aside to allow the flavors to meld.

    In a small bowl, mix together the mayonnaise, minced chipotle peppers, lime juice, and garlic powder until smooth. Adjust seasoning to taste.

    Warm the corn tortillas on the grill or in a skillet for a few seconds on each side. Place a portion of grilled fish on each tortilla, top with cilantro-lime cabbage, and drizzle with chipotle sauce. Serve with lime wedges on the side.
