Biscotti Preparation

    Prepare the Dough

    In a large bowl, whisk together the flour, sugar, baking powder, and salt. In a separate bowl, beat the eggs and mix in the vanilla extract. Pour the egg mixture into the dry ingredients and mix until combined. Fold in the almonds and chocolate chips if using.

    Shape and Bake

    Preheat the oven to 350°F (175°C). Divide the dough into two equal portions and shape each into a log about 12 inches long and 2 inches wide. Place the logs on a baking sheet lined with parchment paper. Bake for 25-30 minutes, or until lightly golden.

    Slice and Second Bake

    Remove the logs from the oven and let them cool for about 10 minutes. Using a serrated knife, slice each log diagonally into 1/2 inch thick pieces. Arrange the slices cut-side down on the baking sheet and return to the oven for an additional 15-20 minutes until crisp.

    Cool and Serve

    Remove the biscotti from the oven and let them cool on a wire rack. Store in an airtight container and enjoy with coffee or tea!
