    Prepare and Cook the Pork

    In a large pot, place the pork belly and cover it with water. Bring to a boil and then reduce the heat to simmer for about 1 hour. This will tenderize the meat.

    Marinate the Pork

    Once cooked, remove the pork belly from the pot and let it cool. In a bowl, combine soy sauce, mirin, sake, sugar, ginger, garlic, and black pepper. Place the pork in the marinade, turning it to coat, and let it marinate for at least 1 hour or overnight for best results.

    Sear the Pork

    Preheat a skillet over medium-high heat. Remove the pork from the marinade and reserve the marinade. Sear the pork belly on all sides until golden brown, about 5 minutes.

    Simmer the Pork

    Add the reserved marinade to the skillet with the pork. Bring to a simmer and cook for an additional 20-30 minutes until the sauce thickens and the pork is infused with flavor.

    Slice the pork belly and drizzle with sesame oil. Garnish with chopped green onions before serving.
