Preparation Steps

  1. 1

    Prepare the Ingredients

Soak the barley in water for a few hours or overnight. Chop the onion finely.

  2. 2

    Cook the Barley

Drain the soaked barley and cook it in boiling water for about 30 minutes until tender. Drain and set aside.

  3. 3

    Mix the Ingredients

In a large mixing bowl, combine the cooked barley, pig's blood, chopped onion, pork fat (finely chopped), salt, black pepper, thyme, and nutmeg. Mix well until fully combined.

  4. 4

    Prepare the Casings

Rinse the pork intestine casings thoroughly under cold water and soak them in water for about 30 minutes.

  5. 5

    Stuff the Casings

Carefully stuff the prepared mixture into the soaked casings using a funnel, making sure not to overfill. Tie off the ends securely.

  6. 6

    Cook the Black Pudding

Place the stuffed sausages in a pot of simmering water and cook for about 30-40 minutes. Do not boil.

  7. 7

    Cool and Slice

Remove the sausages from the water and let them cool. Once cooled, slice into rounds and serve.
