    Marinate Chicken

    In a bowl, combine the diced chicken with 1 tablespoon of soy sauce and cornstarch. Mix well and let marinate for about 15 minutes.

    Prepare Sauce

    In a small bowl, whisk together the remaining soy sauce, rice vinegar, and water. Set aside.

    Cook Chicken

    In a large skillet or wok, heat the peanut oil over medium-high heat. Add the marinated chicken and stir-fry until golden brown and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.

    Stir-Fry Vegetables

    In the same skillet, add the garlic, ginger, bell pepper, and zucchini. Stir-fry for about 3-4 minutes until the vegetables are tender but still crisp.

    Combine Ingredients

    Add the cooked chicken back to the skillet along with the dried red chilies. Pour the prepared sauce over the mixture and stir well to combine. Cook for an additional 2-3 minutes.

    Remove from heat and stir in the chopped roasted peanuts. Serve hot, garnished with sliced green onions.
