Prepare the Char Siu
In a bowl, mix soy sauce, honey, five spice powder, and rice vinegar. Add the pork shoulder and marinate for at least 2 hours, preferably overnight.

Cook the Char Siu
Preheat oven to 180°C (350°F). Place the marinated pork on a baking tray and roast for about 45 minutes, basting with the marinade every 15 minutes until caramelized and cooked through.

Prepare the Sushi Rice
Rinse sushi rice under cold water until the water runs clear. Cook according to package instructions. Once cooked, let it cool slightly and mix with a splash of rice vinegar.

Assemble the Sushi
On a bamboo mat, lay a nori sheet. Spread a thin layer of sushi rice, leaving a border. Place thinly sliced cucumber, avocado, and any char siu on top. Roll tightly and slice into pieces.

Serve
Serve char siu with sesame seeds sprinkled on top, alongside sushi rolls with wasabi and pickled ginger.
