    Prepare the Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear to remove excess starch. In a medium saucepan, combine the rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes. Remove from heat and let it sit, covered, for an additional 10 minutes.

    Season the Rice

    In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Transfer the cooked rice to a large bowl and gently fold in the vinegar mixture. Allow the rice to cool to room temperature.

    Prepare the Fillings

    Slice the cucumber and avocado into thin strips. Shred the imitation crab meat if using the stick variety.

    Assemble the Rolls

    Place a bamboo sushi mat on a flat surface and lay a sheet of nori on top, shiny side down. Wet your hands to prevent sticking and grab a handful of sushi rice. Spread the rice evenly over the nori, leaving about 1 inch at the top edge. Lay cucumber, avocado, and crab meat in a line across the center of the rice.

    Roll the Sushi

    Using the bamboo mat, carefully roll the sushi away from you, pressing gently but firmly to keep the roll tight. Once rolled, use a sharp knife to slice the roll into bite-sized pieces. Wipe the knife with a damp cloth between cuts for cleaner slices.

    Serve

    Arrange the California rolls on a plate and serve with soy sauce, wasabi, and pickled ginger on the side.
