    Prepare the Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. Combine rice and water in a rice cooker and cook according to the manufacturer's instructions. Once cooked, let it cool slightly.

    Season the Rice

    In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice. Let the rice cool to room temperature.

    Prepare the Ahi Salmon

    Slice the Ahi salmon against the grain into thin, bite-sized pieces.

    Form the Nigiri

    Wet your hands with water to prevent sticking. Take a small amount of sushi rice (about 2 tablespoons) and form it into an oval shape. Top each piece of rice with a slice of Ahi salmon.

    Serve

    Place the nigiri on a serving plate. Serve with wasabi, soy sauce, and pickled ginger on the side.
