Prepare the Prawns
In a large pot, bring water to a gentle simmer. Add the prawns and poach them for 3-4 minutes until they turn pink and opaque. Remove and set aside.

Prepare the Dungeness Crab
If using cooked Dungeness crab, gently break it into chunks. If raw, steam or boil until cooked, then break into pieces.

Char the Shishitos
In a skillet over medium-high heat, add a drizzle of oil. Add the shishito peppers and char until blistered on all sides, about 5-6 minutes. Set aside.

Make the Chile Crisp Vinaigrette
In a small bowl, whisk together olive oil, vinegar, and chile crisp. Season with salt and pepper to taste.

Prepare the Gochujang Creme Fraiche
In a small bowl, mix together creme fraiche and gochujang until well combined. Adjust seasoning to taste.

Assemble the Dish
On a serving platter, arrange the poached prawns, Dungeness crab, sliced cucumbers, and melon. Top with charred shishitos, drizzle with chile crisp vinaigrette, and dollop with gochujang creme fraiche. Garnish with fresh basil.
