Cooking the Salmon

Prepare the Salmon
Season the king salmon fillet with sea salt and black pepper on both sides.

Sear the Salmon
In a skillet over medium-high heat, add olive oil. Once hot, add the salmon fillet skin-side down and sear for 4-5 minutes. Flip and sear the other side for an additional 3-4 minutes until cooked to your desired doneness.

Blend Ingredients
In a blender, combine coconut milk, lime juice, cilantro, minced garlic, and ginger. Blend until smooth, then adjust seasoning as necessary.

Plate the Dish
On a serving plate, pour a generous amount of coconut leche de tigre. Place the seared salmon on top, and garnish with diced heirloom tomatoes, spiced cashews, a drizzle of chile oil, and fresh basil leaves.
