Madeleine Batter
Method
Preparation
- 1
Prepare the Batter
In a medium bowl, melt the butter and let it cool slightly. In a separate bowl, whisk together the flour, sugar, baking powder, and salt. In another bowl, beat the eggs until frothy and then mix in the vanilla extract and Calvados. Combine the wet ingredients with the dry ingredients, then fold in the melted butter until just combined. Chill the batter in the refrigerator for at least 30 minutes.

Bake the Madeleines
Preheat the oven to 375°F (190°C). Grease a mini madeleine pan with butter or cooking spray. Spoon the chilled batter into each cavity, filling them about 3/4 full. Bake for 10-12 minutes, or until the edges are golden and the centers spring back when lightly touched. Remove from the oven and let cool in the pan for a few minutes before transferring to a wire rack.
