Prepare Yeast Mixture
In a small bowl, combine warm water (about 110°F) and active dry yeast. Let it sit for about 5-10 minutes until frothy.

Mix Dough
In a large mixing bowl, combine flour, sugar, and salt. In a separate bowl, whisk together eggs, milk, vanilla extract, and melted butter. Add the frothy yeast mixture to the egg mixture.

Combine Mixtures
Pour the wet ingredients into the dry ingredients and mix until a dough forms. Knead the dough on a floured surface for about 5 minutes until smooth.

Let Dough Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1-2 hours until doubled in size.

Roll Out Dough
Once risen, punch down the dough and roll it out on a floured surface to about 1/4 inch thick. Cut into squares or rectangles.

Heat Oil
In a deep pot or fryer, heat oil to 350°F (175°C).

Fry Beignets
Carefully drop the cut dough pieces into the hot oil, frying for about 2-3 minutes on each side until golden brown. Remove and drain on paper towels.

Dust with Powdered Sugar
While still warm, dust the beignets generously with powdered sugar before serving.
