    Cook the Filling

    In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until translucent. Add ground beef or shredded chicken, season with salt and pepper, and cook until browned and cooked through.

    Prepare the Enchiladas

    Preheat the oven to 350°F (175°C). In a baking dish, spread a thin layer of red or green chile sauce. Take a tortilla, fill it with the meat mixture, and a spoonful of sour cream or a beaten egg. Roll it up tightly and place seam-side down in the baking dish.

    Assemble and Bake

    Repeat until all tortillas are filled and placed in the dish. Pour the remaining chile sauce over the enchiladas and sprinkle shredded cheese on top. Bake in the oven for 20-25 minutes until the cheese is melted and bubbly.

    Remove from the oven, let it cool for a few minutes, and serve hot with additional sour cream or garnish as desired.
