Nopalito’s Nachos Recipe
They’re more like a meal than an appetizer! Our loaded beef nachos are piled high onto a plate full of crispy corn tortilla chips with lots of green chile, and cheese. Topped off with shredded lettuce and tomato they look so good you’ll hate to eat them but we know you’re gonna eat them anyway!

Cook the Beef
In a large skillet, heat olive oil over medium heat. Add ground beef, season with salt and pepper, and cook until browned, about 7-10 minutes. Drain excess fat.

Add Green Chile
Stir in the diced green chile with the cooked beef and let it simmer for another 5 minutes.

Prepare the Nachos
On a large serving platter, spread out the corn tortilla chips evenly. Top them with the beef and green chile mixture.

Add Cheese
Sprinkle shredded cheddar cheese generously over the top.

Melt the Cheese
Place the nachos in a preheated oven at 350°F (175°C) for about 5-7 minutes, or until the cheese is melted and bubbly.

Garnish and Serve
Remove from the oven and top with shredded lettuce and diced tomatoes before serving.
