Preparation Instructions
Cook the Chicken
In a skillet over medium heat, add 1 tablespoon of olive oil. Season the chicken breasts with salt, pepper, cumin, and garlic powder. Cook the chicken for about 6-7 minutes on each side or until fully cooked. Remove from heat and let cool before shredding.
Prepare the Quesadilla Filling
In a mixing bowl, combine the shredded chicken, diced green chiles, and shredded cheese. Mix well until all ingredients are well incorporated.
Assemble the Quesadillas
Heat a separate skillet or griddle over medium heat and add the remaining tablespoon of olive oil. Place a tortilla on the skillet and spread a portion of the chicken mixture over half of the tortilla. Fold the other half over to create a half-moon shape.
Cook the Quesadillas
Cook for about 3-4 minutes on each side or until the tortilla is golden brown and crispy, and the cheese has melted. Remove from the skillet and repeat with the remaining tortillas and filling.
Serve
Cut the quesadillas into wedges and serve warm with your choice of salsa, guacamole, or sour cream.
