In a large bowl, season the cubed pork shoulder with salt, black pepper, and garlic powder. Mix well to coat the meat evenly.

Brown the Pork
Add the seasoned pork to the pot and cook until browned on all sides, about 10 minutes.

Add Broth and Simmer
Pour in the chicken broth and bring the mixture to a boil. Reduce heat to low and cover the pot. Simmer for 1.5 to 2 hours, or until the pork is tender.

Stir in the red or green chile powder, adjusting the amount to taste. Let it simmer for an additional 30 minutes, uncovered, to thicken the sauce.

While the chile is simmering, warm the flour tortillas on a skillet or in the oven.
