    Prepare the Sopaipilla Dough

    In a mixing bowl, combine the sopaipilla dough ingredients and mix until a soft dough forms. Let it rest for 30 minutes.

    Roll and Cut the Dough

    On a floured surface, roll out the dough to about 1/4 inch thick. Cut into circles or squares, about 4-6 inches in size.

    Prepare the Filling

    In a separate bowl, mix the shredded chicken with red or green chile sauce, cumin, and salt.

    Stuff the Sopaipillas

    Take each piece of dough and place a spoonful of the chicken mixture in the center. Fold over and seal the edges by pressing with a fork.

    Fry the Sopaipillas

    In a deep skillet, heat vegetable oil over medium-high heat. Fry each stuffed sopaipilla until golden brown on both sides, about 2-3 minutes per side.

    Serve

    Remove the sopaipillas from the oil and drain on paper towels. Serve hot, garnished with cheese and cilantro if desired.
