Prepare the Filling
In a skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent. If using ground beef, cook until browned. If using chicken, ensure it is shredded and heated through. For sour cream, just mix in with the onions. If using eggs, scramble them in a separate pan and then combine.

Mix the Filling
In a bowl, combine the sautéed onion and meat (or sour cream or scrambled eggs). Add salt and pepper to taste. Mix in one cup of shredded cheese.

Assemble the Enchiladas
Preheat the oven to 350°F (175°C). Take a tortilla, spoon some filling down the center, and roll it up. Place seam-side down in a greased baking dish. Repeat until all filling and tortillas are used.

Add Sauce and Cheese
Pour the red or green chile sauce over the rolled enchiladas. Sprinkle the remaining shredded cheese on top.

Bake
Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

Remove from the oven, let cool slightly, garnish with cilantro if desired, and serve hot.
