Prepare the Egg Mixture
In a bowl, beat the eggs and mix them with sour cream. Set aside.

Assemble the Enchiladas
Preheat the oven to 350°F (175°C). Take a corn tortilla, fill it with the meat mixture, and roll it up. Place the rolled enchilada seam-side down in a baking dish. Repeat until all tortillas are filled.

Add Sauce and Cheese
Pour the red or green chile sauce over the enchiladas, making sure they are well coated. Pour the egg and sour cream mixture over the top, then sprinkle shredded cheese evenly over everything.

Bake
Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

Serve
Remove from oven, let cool for a few minutes, then serve hot with additional sour cream or toppings of choice.
