Prepare the Filling
In a large bowl, combine the chili con carne, shredded beef, and shredded chicken. Mix well and set aside.

Heat the Tortillas
In a dry skillet over medium heat, lightly warm the corn tortillas for about 30 seconds on each side until pliable. This helps prevent them from breaking when rolled.

Assemble the Enchiladas
Take a warmed tortilla and spoon about 1/4 cup of the filling mixture onto the center. Roll the tortilla tightly around the filling and place seam-side down in a greased baking dish. Repeat with all tortillas.

Add Sauce and Cheese
Pour your choice of red or green enchilada sauce over the rolled enchiladas, ensuring they are well coated. Sprinkle shredded cheese and chopped onion on top.

Bake
Preheat the oven to 375°F (190°C) and bake the enchiladas for 20-25 minutes, or until the cheese is bubbly and golden.

Garnish and Serve
Remove from the oven, garnish with fresh cilantro, and serve hot with additional sauce on the side if desired.
