Prepare the Filling
In a large mixing bowl, combine the cooked shredded chicken, refried beans, chopped onion, shredded cheese, and half of the enchilada sauce. Mix until well combined.

Assemble the Chimichangas
Lay a flour tortilla flat and spoon about 1/4 of the filling mixture in the center. Fold the sides over the filling and roll it tightly from the bottom up to form a burrito shape. Repeat with remaining tortillas and filling.

Fry the Chimichangas
In a large skillet, heat the vegetable oil over medium-high heat. Once hot, carefully add the chimichangas seam side down. Fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

Serve with Enchilada Sauce
Place the fried chimichangas on a serving plate. Drizzle the remaining enchilada sauce over the top and garnish with chopped cilantro. Serve immediately.
