Taco

Prepare the Taco Filling
In a skillet over medium heat, brown the ground beef. Drain excess fat, then add taco seasoning and water as per package instructions. Simmer for 10 minutes.

Assemble the Tacos
Fill taco shells with the beef mixture, then top with shredded lettuce, diced tomatoes, cheese, and sour cream.
Flauta

Prepare the Flautas
Fill each corn tortilla with shredded chicken, tightly roll them up, and secure with toothpicks if necessary.

Fry the Flautas
In a large frying pan, heat oil over medium-high heat. Fry the rolled tortillas until golden brown and crispy. Drain on paper towels.
Rolled Enchilada

Prepare the Enchiladas
Soften tortillas in a hot skillet, then fill with shredded beef, roll up, and place in a baking dish.

Bake the Enchiladas
Pour enchilada sauce over the top, sprinkle with cheese, and bake in a preheated oven at 350°F (175°C) for 20 minutes.
Chile Con Carne

Cook the Chile
In a pot, brown the ground beef over medium heat. Add chopped onion and cook until translucent. Stir in diced tomatoes, chili powder, and kidney beans. Simmer for 30 minutes.
Beans and Rice

Cook the Rice
In a saucepan, combine rice and chicken broth. Bring to a boil, then reduce heat and simmer covered for 20 minutes.

Stir in the black beans and chopped cilantro into the cooked rice, and heat through.
