    Prepare the Chiles

    Preheat your oven to 400°F (200°C). Carefully roast the long green chiles on a baking sheet for about 20 minutes, turning occasionally, until the skin is blistered and charred. Remove from the oven and let them cool in a covered bowl to steam.

    Stuff the Chiles

    Once the chiles are cool enough to handle, gently peel off the charred skin. Make a slit down one side of each chile and remove the seeds. Stuff each chile with about 1/2 cup of shredded Monterey Jack cheese.

    Cook the Chiles

    In a skillet, heat olive oil over medium heat. Carefully place the stuffed chiles in the skillet and cook for about 5 minutes on each side, or until the cheese is melted and the chiles are slightly crispy.

    Serve with Sauce

    Place the cooked chiles on a serving plate and smother them with red or green chile sauce. Sprinkle with garlic powder, salt, and black pepper to taste before serving.
