    Prepare the Peppers

    Roast the poblano peppers over an open flame or under a broiler until the skin is blistered and charred. Place them in a plastic bag for about 10 minutes, then peel off the skin, remove the seeds, and set aside.

    Make the Filling

    In a bowl, mix the cheddar and Monterey Jack cheeses. Stuff each poblano pepper with the cheese mixture.

    Prepare the Batter

    In another bowl, beat the eggs until fluffy. Gradually fold in the flour, then add milk, salt, and black pepper to make a batter.

    Fry the Peppers

    Heat the vegetable oil in a large skillet over medium heat. Dip each stuffed pepper in the batter and carefully place them in the hot oil. Fry until golden brown, about 3-4 minutes on each side. Remove and drain on paper towels.

    In a saucepan, sauté minced garlic and chopped onion until translucent. Add tomato sauce and simmer for 10 minutes. Season with salt and pepper to taste.
