Prepare the Meat
In a large skillet, brown the ground beef over medium heat. Drain excess fat.

Add Vegetables and Spices
Add chopped onion and minced garlic to the skillet. Cook until the onion is translucent. Stir in the diced tomatoes, kidney beans, black beans, chili powder, cumin, salt, and pepper. Simmer for 10 minutes.

Assemble Tortillas
Preheat the oven to 375°F (190°C). Spread a layer of the meat and bean mixture onto each tortilla. Roll them up and place them seam-side down in a baking dish.

Add Sauce and Cheese
Pour enchilada sauce over the rolled tortillas, making sure they are well covered. Sprinkle shredded cheese on top.

Bake
Bake in the preheated oven for 20-25 minutes or until the cheese is melted and bubbly.

Remove from the oven, let cool slightly, and serve warm.
