Cook the Filling
In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat. Add diced onion and minced garlic, and sauté until onions are translucent. Stir in the red or green chile sauce, black beans, cumin, salt, and pepper. Mix well and let it simmer for about 5 minutes until heated through.

Assemble the Chimichangas
Warm the tortillas in a microwave or on a skillet for a few seconds to make them pliable. Spoon a generous amount of the filling onto the center of each tortilla. Sprinkle shredded cheddar cheese on top. Fold the sides of the tortilla over the filling, then roll it up from the bottom to secure the filling.

Fry the Chimichangas
In a deep skillet or fryer, heat oil over medium-high heat. Carefully place the chimichangas seam-side down in the hot oil. Fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

Serve hot with additional chile sauce, sour cream, and guacamole on the side.
