Assemble the Enchiladas
In a baking dish, spread a layer of enchilada sauce. Take a corn tortilla, dip it in the enchilada sauce, fill it with a mixture of cheeses and refried beans, and roll it up. Place it seam-side down in the baking dish. Repeat this for all tortillas, layering them as needed.

Add Sauce and Bake
Once all the tortillas are filled and placed in the baking dish, pour the remaining enchilada sauce over the top and sprinkle the remaining cheese mixture over the top. Bake in the preheated oven for about 20-25 minutes, until the cheese is bubbly and golden.

Serve
Remove from the oven and let cool slightly. Garnish with chopped cilantro. Serve the enchiladas with cooked rice and beans on the side.
