    Prepare the chicken

    Trim excess fat from the chicken thighs and pat them dry with paper towels. Cut the thighs into roughly 1 to 1 1/4-inch pieces so they cook evenly and will fit nicely on skewers.

    Make the marinade

    In a medium bowl combine yogurt, 2 tbs olive oil, lemon juice, minced garlic, smoked paprika, ground cumin, dried oregano, salt, black pepper, honey (or brown sugar) and red pepper flakes if using. Whisk until smooth.

    Marinate the chicken

    Add the cut chicken to the marinade and stir to coat thoroughly. Cover and refrigerate for at least 1 hour and up to 8 hours. For best flavor, marinate 3–4 hours. If short on time, 30 minutes will still add flavor.

Skewers & Vegetables

    Prepare skewers and vegetables

    If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Meanwhile, cut the bell peppers, red onion, and zucchini into pieces roughly the same size as the chicken cubes so everything cooks evenly.

    Assemble the skewers

    Thread the marinated chicken pieces onto skewers, alternating with bell pepper, onion, and zucchini pieces. Leave a little space between pieces so heat circulates. If using cherry tomatoes, add them near the end of assembly so they don’t burst during long grilling.

    Season assembled skewers

    Lightly brush the assembled skewers with 1 tbs olive oil and sprinkle a small pinch of salt and pepper over the vegetables and chicken.

Cooking & Finishing

    Preheat grill or broiler

    Preheat an outdoor grill to medium-high (about 400–450°F / 200–230°C) or set an oven broiler to high with the oven rack in the top third of the oven. If using a grill pan on the stove, heat it over medium-high heat and lightly oil the surface.

    Grill or broil the skewers

    Place skewers on the preheated grill grates or broiler pan. Cook for about 10–12 minutes total, turning every 2–3 minutes to get even char and prevent burning. Chicken is done when an instant-read thermometer inserted into the largest piece reads 165°F (74°C) and juices run clear. If pieces are smaller or larger adjust time accordingly.

    Rest and garnish

    Transfer cooked skewers to a plate and let rest 3–5 minutes. Squeeze fresh lemon wedges over the skewers, sprinkle chopped parsley, and adjust salt and pepper to taste. Serve hot.
