    Prepare the Vegetables

    Wash and chop all the vegetables into bite-sized pieces. Make sure to slice the carrots, zucchini, and chop the bell peppers into strips. Set aside.

    Mix the Sauce

    In a small bowl, combine soy sauce, sesame oil, minced garlic, minced ginger, cornstarch, and water. Whisk until smooth and set aside.

    Heat the Oil

    In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.

    Stir-Fry the Vegetables

    Add the prepared vegetables to the skillet. Start with the carrots and broccoli, stir-frying for about 2 minutes. Then add the bell peppers, zucchini, and snap peas, and stir-fry for another 3-4 minutes until the vegetables are tender but still crisp.

    Add the Sauce

    Pour the prepared sauce over the stir-fried vegetables. Stir well to combine and cook for an additional 2 minutes, allowing the sauce to thicken slightly.

    Season and Serve

    Season with salt and pepper to taste. Remove from heat and garnish with chopped green onions before serving.
