Method
Preparation of Sticky Rice
- 1
Soak the Rice
Rinse 1 cup of glutinous rice under cold water until the water runs clear. Soak the rice in water for at least 4 hours or overnight for best results.
- 2
Steam the Rice
After soaking, drain the rice and place it in a steamer basket lined with cheesecloth or a clean kitchen towel. Steam the rice for about 30-40 minutes until it is translucent and tender.
Coconut Sauce Preparation
- 3
Make the Coconut Sauce
In a saucepan, combine 1 cup of coconut milk, 1 tablespoon of sugar, and 1 teaspoon of salt. Cook over medium heat, stirring until the sugar dissolves. Remove from heat, and reserve half of the sauce for drizzling later.
Combining Ingredients
- 4
Mix the Rice with Coconut Sauce
Once the rice is done steaming, transfer it to a large bowl. Pour the coconut sauce mixture over the hot rice and stir gently to combine. Let it sit for about 15-20 minutes to allow the rice to absorb the flavors.
Serving
- 5
Prepare the Mango
While the rice is absorbing the coconut sauce, peel and slice the ripe mangoes into thin strips.
- 6
Plate the Dish
To serve, place a portion of the sticky rice on a plate, arrange the mango slices beside it, and drizzle the reserved coconut sauce over the top. Optionally, sprinkle sesame seeds or mung beans for garnish.
