Method

Marinade Preparation

  1. 1

    Combine Marinade Ingredients

In a medium mixing bowl, whisk together soy sauce, brown sugar, ketchup, pineapple juice, rice vinegar, minced garlic, grated ginger, sesame oil, and ground black pepper until the sugar is dissolved and the mixture is smooth.

  2. 2

    Marinate Chicken

Place the chicken thighs and drumsticks in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 2 hours, preferably overnight for maximum flavor.

Cooking the Chicken

  1. 3

    Preheat the Grill

Preheat your grill to medium-high heat (about 375°F to 400°F).

  2. 4

    Prepare Chicken for Grilling

Remove the chicken from the marinade, allowing excess marinade to drip off. Discard the leftover marinade.

  3. 5

    Grill the Chicken

Place the chicken pieces skin-side down on the grill. Cook for about 6-8 minutes on one side, then flip and cook for another 6-8 minutes, or until the internal temperature reaches 165°F (74°C) and the chicken is nicely charred.

Garnishing and Serving

  1. 6

    Garnish the Chicken

Once cooked, remove the chicken from the grill and let it rest for 5 minutes. Sprinkle sliced green onions and sesame seeds over the top before serving.

  2. 7

    Serve

Serve the Huli Huli Chicken hot, accompanied by steamed rice or a fresh salad if desired.
