Haupia Layer Preparation

Make the Haupia
In a medium saucepan, combine coconut milk, sugar, cornstarch, salt, and water. Whisk together until smooth.

Heat the Mixture
Place the saucepan over medium heat and cook, stirring continuously, until the mixture thickens and begins to bubble. This should take about 5-7 minutes.

Set the Haupia
Once thickened, pour the mixture into a greased 9x9 inch pan and let it cool to room temperature. Then refrigerate for at least 2 hours until set.
Sponge Cake Preparation

Preheat Oven
Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.

Combine Dry Ingredients
In a bowl, sift together flour, sugar, baking powder, and salt.

Beat Eggs
In a separate large bowl, beat the eggs until fluffy. Add the vanilla extract and mix well.

Combine Mixtures
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Bake the Cake
Pour the batter into the prepared baking pan and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.

Cool the Cake
Once baked, remove from the oven and allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Assembly and Topping

Layer the Cake
Once the cake and haupia are cooled, cut the sponge cake into two layers. Place the first layer on a serving platter.

Add Haupia Layer
Spread half of the haupia mixture over the first layer of sponge cake.

Add Second Layer
Place the second layer of sponge cake on top of the haupia. Spread the remaining haupia on top.

Add Toppings
Top with whipped cream and sprinkle shredded coconut over the top.

Chill and Serve
Refrigerate the assembled cake for at least 1 hour before serving to allow the layers to set together.
