Preparation of Pudding

    Combine Ingredients

    In a mixing bowl, whisk together the cornstarch and sugar until well combined.

    Mix with Coconut Milk

    In a saucepan, combine the coconut milk and water. Heat over medium heat until warm but not boiling.

    Dissolve Cornstarch Mixture

    Gradually add the cornstarch and sugar mixture to the warm coconut milk mixture, whisking continuously to prevent lumps.

    Cook the Mixture

    Continue to cook the mixture over medium heat while stirring constantly until it thickens, about 10-15 minutes.

    Cool the Pudding

    Once thickened, remove from heat and pour the pudding into a greased dish or individual cups. Allow to cool to room temperature.

    Refrigerate

    Cover the dish with plastic wrap and refrigerate for at least 2 hours or until set.

    Once the haupia is set, cut it into squares or scoop it into serving cups.
