Method

Preparing the Grilled Salmon

  1. 1

    Marinate the Salmon

In a bowl, mix together olive oil, minced garlic, lemon juice, salt, black pepper, and fresh dill. Place the salmon fillets in the bowl and coat them well with the marinade. Let it marinate for at least 30 minutes.

  2. 2

    Preheat the Grill

Preheat your grill to medium-high heat while the salmon is marinating.

  3. 3

    Grill the Salmon

Once the grill is ready, place the marinated salmon fillets skin-side down on the grill. Cook for 5-6 minutes on each side or until the salmon is cooked through and flakes easily with a fork.

Preparing the Seasonal Vegetables

  1. 4

    Chop the Vegetables

Wash and chop the zucchini, bell peppers, and asparagus into bite-sized pieces.

  2. 5

    Sauté the Vegetables

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped vegetables, salt, and black pepper. Sauté for about 5-7 minutes until they are tender but still crisp.

Cooking the Rice

  1. 6

    Rinse the Rice

Rinse the rice under cold water until the water runs clear.

  2. 7

    Cook the Rice

In a medium saucepan, combine the rinsed rice, water, and salt. Bring to a boil, then reduce the heat to low, cover, and simmer for 18-20 minutes or until the water is absorbed and the rice is tender.
