Coconut Shrimp

    Prepare Shrimp

    In a mixing bowl, season the shrimp with salt and black pepper. Set aside for 10 minutes.

    Set Up Breading Station

    In three separate bowls, place the flour, beaten eggs, and a mixture of shredded coconut and panko breadcrumbs.

    Bread the Shrimp

    Dredge each shrimp in flour, dip into the beaten eggs, and then coat with the coconut and panko mixture. Press lightly to ensure the coating adheres.

    Fry the Shrimp

    In a large skillet, heat vegetable oil over medium-high heat. Once hot, fry the shrimp in batches for about 2-3 minutes per side until golden brown. Remove and drain on paper towels.

    Prepare Potatoes

    Rinse and dry the potatoes. Slice thinly using a mandoline or sharp knife.

    In a separate skillet, heat vegetable oil over medium-high heat. Once hot, fry the potato slices in batches until golden and crispy, about 3-4 minutes. Remove and drain on paper towels. Sprinkle with salt immediately.
